Stone 5th Anniversary IPA

Ingredients for 5 gallons
13.56lb two-row pale malt
.99 lb 15 L caramel malt
3.87 oz Magnum pellet hops
1.55 oz centennial pellet hops, in whirlpool
2.58 centennial pellet hops, dry hopped
Look for a yeas strain similar to Stone’s (the directions actually say that) - call White Labs for this
Original Target gravity: 1.078
Final Target gravity: 1.012
IBUs: 215
Mash in at 148 degrees F. Rest for 1 hour. 90 minute boil. Add Risish moss or Whirlifloc-G at 10 minutes before the end of the boil.
Extract substitution: replace pale malt with 9.8lb light malt extract. Sock specialty grains in brewing water as it heats - remove grains when temperature reaches 160F. Add hops and boil.
When you turn off the flame at end of 90 minute boil, give brew a good spin to create whirlpool. Add centennial hops. Let it sit for 15 minutes. Then cool wort to 72F. Pitch the yeast and ferment at 72F until signs of fermentation have slowed down significantly. Rack beer into sanitized fermenter containing dry hops. Let it sit at room temp for a few days (2-3), chill to 36F. Let it sit for 1 more week, then bottle.
